Protein Pancakes

Protein Pancakes
(serves approximately 16 medium sized pancakes)

7 large eggs
2 cups whole oats
2 cups cottage cheese
1 teaspoon cinnamon (optional) 
1 teaspoon baking soda

Combine all ingredients in a blender at high speed for one minute or until the mixture is completely smooth. Pour ¼ cup batter on a medium-hot griddle and turn when there are bubbles in the center of each pancake, cook the other side until golden. Serve with pure maple syrup and some fresh fruit on the side.
