Lavender Raspberry Jam Mojito (for Bourbon Drinkers!)
Serves 10 (in a 10 oz rocks glass filled halfway with ice)
6 c bourbon
2 c brown sugar
2 c lime juice
10 sprigs mint (about 80 leaves), muddled
1 c Cellar Door raspberry lavender jam
1 c club soda
5 oz. bottle Beehive spiced orange bitters, added individually to each serving over ice.
Muddle the mint (leaves pulled off the stem) with lime juice and sugar in a medium glass measuring cup, pounding and muddling mint leaves with the back of a wooden spoon for a few minutes until juicy and mixed well. Add raspberry jam & 2 cups bourbon and stir to mix again.
With a fine mesh sieve strain out raspberry seeds and mint leaves over a 12 cup or larger container. Add additional 4 cups bourbon and the club soda. Mix well and encourage guests to pour their own cocktail over ice with a garnish of mint and 1 teaspoon bitters.
