French 75 -- en Masse
Serves 20 (in champagne flutes)
2 c sugar
2 c water
2 c lemon juice
6 tarragon sprigs
3 c gin, chilled
2 ½ bottles (7 c) dry champagne or sparkling wine, such as Mawby Green
Make a Lemon Simple Syrup: Combine lemon juice, sugar, and water in a small saucepan; bring to a boil. Reduce heat, simmer for 4 minutes or until sugar is dissolved. Add tarragon and steep for 3 minutes then remove tarragon and discard. Remove from heat and chill.
Combine Lemon Simple Syrup with gin, add champagne slowly, and stir. Garnish with a few sprigs of tarragon in the pitcher. This drink really is good without ice, but if it gets too warm, serve with ice on the side so guests can chill it a bit.
