Power Bites (2 Ways)

These recipes represent the Lark mission of eating clean all week and splurging on the weekend! Below you will find one recipe for eating clean on the weekdays, and another recipe of the same dish for the weekend SPLURGE.


Lark Peanut Butter Bites
Makes 60 1 ½ inch servings

16 ounces honey
16 ounces natural creamy peanut butter
4 c whole oats (if using oat flour, use 3 c oat flour)
2 c rice krispies
½ c chocolate chips
1 c M & M’s candy (optional, of course)


In a blender or food processor, grind oats until powdery like a flour, 1-2 minutes on high. In stand mixer or large bowl, combine honey and peanut butter until you have one smooth paste. Add oat flour and stir until mixed. Add rice krispies and stir gently until combined. Combine with chocolate chips & m & m’s, and using your hands, roll into 1 ½ inch balls (size of one small ice cream scoop.) Refrigerate -- these are best eaten cold! Freezes well.


Clean Almond Butter Bites
Makes 60 1 ½ inch servings

20 ounces honey
16 ounces natural creamy almond butter (I like Barney Butter found at Thrive market)
4 c Spera Tiger Nut Flour
½ c white sesame seeds
2 T ground flax seed
½ c golden raisins
¼ c flaked coconut
¼ c cacao nibs


In stand mixer or large bowl, combine honey and almond butter until you have one smooth paste. Add tiger nut flour and stir until mixed. Add sesame seeds, ground flax seed, golden raisins, cacao nibs, and coconut and using your hands, roll into 1 ½ inch balls (size of one small ice cream scoop.) Refrigerate -- these are best eaten cold!
