The Sunday Pancake

During the week I make Spera Food’s TIGERNUT pancake mix but on the weekend we make this recipe from our friend Rob. He stirs together a huge batch and just keeps flipping until everyone is awake. My kids adore the flavor of this one -- and it’s worth the Living LARK splurge! Hint: BUTTER BUTTER BUTTER BUTTER!


The Sunday Pancake
(makes 12 large pancakes)

1 egg
1/4 c melted butter
1 1/2 c vanilla yogurt (or plain -- whatever you have on hand will work)
1 1/2 c milk
2 c flour
3 T sugar
2 t baking powder
1 t baking soda
1/2 t salt


Mix in the order listed and cook on buttered griddle. Flip the pancakes when the edges get bubbly and golden brown on the opposing side. Serve with more butter and loads of real maple syrup. My friend Shanna always warms up the syrup, but I don’t take the time for things of the sort.
